I am not 100% sure I understand what you are saying but if the range of temperatures plotted is very small, say if they are all between 297.9999999 and 298.0000001, then only one value will be indicated next to the colorbar (Note that you can control how many digits are displayed, see documentation). This gives me the impression that the temperature in your model does not vary significantly spatially. This could be because the water provides an effective means for heat to spread out.
If this does not appear to be the issue, I suggest you post your .mph file to this thread so users of this Discussion Forum can better understand what you are seeing and provide better suggestions.
