Is it possible to have different mesh sizes (e.g extra fine, normal, etc) for different subdomains, and if so, how may this be performed?

It's possible, and actually quite easy.
The simplest way is to do it part by part using the interactive mesh toolbar, though this won't give you as much control. Normally, this toolbar is to the left of your model. You can also have different sizes for boundaries, for example.
To do this, go to boundary or subdomain selection mode (whichever you prefer), and then select the subdomain you want to mesh. Once you have it, you can play with the different meshing options in the toolbar. Check the descriptions for every button, and you'll be fine. Just remember, in the lower right corner of the screen you can see the current mesh refinement selection (that is, the mesh refinement COMSOL will use for the next meshing). As a general rule, red icons act over the subdomains you've selected, gray/transparent icons work over all the model, and icons with a curved arrow act over the unmeshed parts.
You can also go to the mesh drop-down menu and select any of the mesh modes (mostly Free-Mesh parameters). In there you also have some control over each subdomain individually.
